Our Head Chef Phillip Gleeson has been classically trained in 5 star hotels and fine dining restaurants in Dublin, Melbourne and the Gold Coast. Some of these establishments include the Conrad International Hotel, The Morrison Hotel and the 6 star Palazzo Versace Hotel in Australia.
He has won awards with the Gold Coast magazine for Chef of the Year 2006 and received rave reviews in the Australian Gourmet Traveler restaurant guide. He also won a star for his role as Chef de Cuisine at Chicane Restaurant in Australia with the Courier Mail Restaurant Guide.
